BUBBLE AND SQUEAK

Ingredients
6 tbsp Butter
1 Brown Onion (diced)
450g Potato (mashed)
50g Peas (cooked)
50g Carrots (cooked)
Salt & Cracked Pepper
How to make it
- Heat the olive oil in a large skillet.
- Add the onion and cook for 5 minutes or until translucent.
- Add the vegetables and season with salt & cracked pepper.
- Heat the vegetables for about 10 minutes so they become mushy.
- Using the back of a spoon flatten the vegetable mix into a pancake.
- Cook for 1 minute and then flip and cook for an additional 1 minute.
- Remove from the pan, cut into slices and serve.
