CHILLI CHICKEN AND AVACADO WRAP
If you love fajitas, you will love this lunchtime wrap. Pan-fry lean chicken breast with lime, chilli and garlic, then pile on top of mashed avocado on a wholemeal wrap. The avocado cools the chilli and creates a delicious combination!

Ingredients
1 Garlic Clove
1/2 tsp Chilli Powder
1/2 Lime (Juice)
300g Chicken Breast
1 tbsp Olive Oil
1 Avacado
2 Wholemeal Wraps
40g Roasted Peppers
Corriander (Garnish)
How to make it
- Finely chop the garlic and place in a mixing bowl along with the chilli powder and the juice from ½ a lime.
- Cut the chicken into pieces and add to the mixing bowl. Cover the chicken with the marinade and put to one side (marinade for longer if you want a stronger flavour).
- Heat the olive oil in a pan over a medium heat before adding the chicken. Cook the chicken for 5 minutes per side or until cooked through.
- Halve the avocado and remove the stone. Mash both halve s up with a fork and then spread evenly between 2 wraps.
- Lay the cooked chicken on top of the avocado, followed by the roasted pepper.
- Sprinkle over some coriander and wrap them up, cut in half and serve.
