SLOW COOKED APRICOT CHICKEN

Ingredients
1 tbsp olive oil600g chicken thigh fillets
1 onion, diced
2 tsp garlic, minced
400ml apricot nectar
1/2 tbsp balsamic vinegar
1 tsp parsley
1 tsp thyme
400g tinned apricot halves, drained
How to make it
- Bring a large frying pan to high heat, add the oil and brown the chicken for about 3-4 minutes.
- Transfer to a 5.5L slow cooker. Add onion to the same pan and cook for about 5 minutes or until translucent.
- Add the garlic, apricot nectar, balsamic vinegar, parsley and thyme.
- Pour the mixture into the slow cooker, cover and cook on low for 6 hours. Add the apricot halves for the last 30 minutes.
- Optional: serve with brown rice or couscous.
