Ingredients
2 tsp olive oil700g chicken breast
1 brown onion, diced
3 stalks celery, sliced
1 tsp Italian seasoning
1 x (400g) tinned tomatoes
To serve:
180g rice (cooked)
How to make it
- Preheat oven to 180°C/350°F/Gas 4.
- Add the oil to a frying pan and bring to medium-high heat.
- Add the chicken and brown the pieces all over.
- Transfer the chicken to an ovenproof casserole dish.
- In the same pan, add the onion, celery, Italian seasoning and tinned tomatoes and bring to a boil.
- Pour the tomato sauce all over the chicken and place in the oven for 45-55 minutes, or until chicken is fully cooked.
- Serve with a side of rice.
