easy tossed salad

Ingredients
FOR THE DRESSING
1/2 avocado
2 tbsp fresh flat leaf parsley
1 1/2 tbsp fresh dill
2 tbsp lime juice, plus 1 tsp lime zest
1 1/2 tbsp avocado oil
salt and cracked black pepper
FOR THE SALAD
1/2 red onion
1 large romaine lettuce, leaves torn
3/4 lebanese cucumber, sliced
2 tomatoes chopped
TO SERVE
80g parmesan cheese
How to make it
- Add all dressing ingredients to a food processor or blender and blitz to combine.
- Prepare the salad ingredients in a large bowl and pour dressing all over.
- Toss really well to combine. Sprinkle with Parmesan cheese before serving.
