Ingredients

360g old fashioned oats (gluten-free if required)
50g almonds, sliced
50g cashews, sliced
120g pumpkin seeds
2 tbsp cinnamon
1 tsp salt
125ml coconut oil
125ml maple syrup
60ml peanut butter

How to make it

  • Start by preheating oven to 180°C/350°F/gas 5. Line a baking tray with baking paper.
  • In a large bowl, mix together the oats, almonds, cashews, pumpkin seeds, cinnamon and salt.
  • In a small saucepan, slowly melt the coconut oil, maple syrup and peanut butter.
  • Pour over the granola mix and stir to combine.
  • Spread evenly across the tray and cook for 20-25 minutes or until golden.
  • Serve with Greek yoghurt, optional.
