LEMON SUGAR PANCAKES

Ingredients

20g almond flour
100g cream cheese, softened
2 eggs
1 tsp lemon zest
1 tbsp butter
For serving:
1 lemon, juiced
1/2 tbsp coconut sugar

How to make it

  • In a medium bowl, whisk together the almond flour, cream cheese, eggs and lemon zest.
  • Bring a frying pan to medium heat and add butter to melt.
  • Pour batter into the pan and cook pancakes one-by-one or two at a time, depending on the pan. (You should have enough for 6 pancakes).
  • Cook for about 2 minutes or until you see bubbles appearing. Flip and cook for another 2 minutes. You can keep the ones you’ve cooked warm under some foil or in the oven.
  • Top with lemon and coconut sugar.
