RASPBERRY RIPE BITES

Ingredients
125g shredded coconut1 tbsp maple syrup
1 tbsp coconut oil
1 tbsp almond milk
1 tsp lemon juice
75g raspberries
100g dark chocolate
How to make it
- Add all the ingredients to a food processor and blitz until just combined (still a little chunky).
- Roll the mixture into bite-sized balls and place on a baking tray lined with baking paper.
- Place in the freezer for 30-40 minutes.
- Meanwhile, slowly melt the chocolate over a double boiler, stirring continuously.
- Roll each bite in the chocolate, place on a large plate and refrigerate until serving.
