Ingredients

4 medium egg whites
1 tsp vanilla extract
1/2 tsp white wine vinegar
50g sucralose sweetner
2 tbsp cocoa powder
1 tsp red food die

How to make it

  • Start by preheating the oven to 110°C/230°F/gas 1/4 gas. Line a
  • baking tray with baking paper.
  • Add the egg whites and vanilla to an electric mixer and whisk until
  • the eggs have stiffened and are forming peaks.
  • Gently fold through the white wine vinegar.
  • Next, start to add the sweetener 2 tbsp at a time, gently folding it
  • through, allowing the mixture to stay fluffy.
  • Finally fold through the cocoa powder and red food dye.
  • Spoon little dollops of meringue onto the baking tray. (spread them
  • out a little so they have room to expand)
  • Place in the middle of the oven and cook for 60 minutes or until
  • crispy on the outside.
