AVOCADO EGG NESTS
If you’re a bit bored of the usual ways to have eggs, these quick-to-make nests will make eggs exciting again! Bake them in scooped out avocados, sprinkle on some feta and serve with juicy parma ham for a brunch or lunch with a difference!

Ingredients
1 large Avocado
2 medium Eggs
20g Feta Cheese
2 slices Parma Ham
How to make it
- Preheat the oven to 200oC.
- Cut the avocado in half lengthways and remove the stone.
- Depending on the size of the holes, you may need to carve a slightly bigger hole.
- Cut a thin section off the avocado so it stands flat.
- Place both halves on a baking tray.
- Separate the yolks and the egg whites.
- Put the yolks into the holes of the avocado and fill the rest of the hole with the remaining egg whites until full.
- Chop up the feta cheese and sprinkle on top of the avocado. Place in the preheated oven for 20 minutes.
- Leave to stand for 3 minutes.
- Plate up the Parma ham and tuck in!
