CREAMY SPINACH

Ingredients
280g baby spinach1/2 brown onion, diced
1 tbsp butter
1 clove garlic
60ml milk
40ml heavy cream
1 tbsp flour
1 tsp nutmeg
Salt & cracked pepper
60g parmesan
How to make it
- Bring a large pot of salted water to boil and cook spinach for about 30 seconds. Drain and place in a bowl of iced water to cool it down.
- Once cold, drain and use your hands to squeeze out as much excess water from the spinach as you can.
- Bring a medium-large frying pan to medium heat, add butter and onion and cook for 3-4 minutes or until onion is soft.
- Add the garlic and heat for another 1 minute before adding milk, cream, flour, nutmeg, salt & cracked pepper.
- Once thickened slightly, add the spinach and parmesan and stir to combine.
- Feel free to add extra parmesan when serving.
