Ingredients

3 egg whites
100g coconut sugar
2 tbsp lime juice
70g almond meal
100g desiccated coconut
1 tbsp self-raising flour
1/2 tsp baking powder

How to make it

  • Preheat oven to 180°C/350°F/Gas 4 and line a baking tray with baking paper.
  • Beat the egg white with an electric beater until soft peaks begin to form. Add the sugar and continue to beat until the peaks stiffen. Add the lime juice and beat for another 10
  • seconds.
  • Next, add the almond meal, coconut, flour and baking powder and fold to combine.
  • Using a spoon, transfer the mixture to the baking tray (leaving room for them to spread).
  • Cook for 15-20 minutes. Once cooked, transfer to a cooling tray and allow to cool for five minutes.
