Ingredients

12 Eggs
125ml Milk
Salt & Cracked Black Pepper
1/2 Red Bell Pepper (diced)
2 Stalks Spring Onion (diced)
100g Mozzarella (diced)

How to make it

  • Preheat oven to 180°C/350°F/gas 5. Grease a 12-case muffin tin with olive oil cooking spray.
  • In a medium-sized bowl, whisk together the eggs, milk, salt & cracked pepper.
  • Pour half the mixture into the egg cups (so they’re only half full). Add bell pepper, spring onion and cheese to each one and then fill to the top with the extra egg mixture.
  • Place in the oven and cook for 15-17 minutes or until cooked through.
