SWEET BRUSSELS SPROUTS

Ingredients
2 tbsp Olive Oil (divided)
200g Bacon (chopped)
60ml Balsamic Vinegar
900g Brussels Sprouts
Salt & Cracked Black Pepper
1 Lemon (juiced)
30ml Water
250g Dried Figs (cut into quarters)
How to make it
- Preheat oven to 200°C/400°F/ gas 6.
- Bring a large skillet to medium heat, add 1/2 tbsp oil and bacon, and cook for about 7 minutes. Once cooked set aside.
- Add the remaining oil, balsamic vinegar and Brussels sprouts to a large oven proof dish.
- Toss to coat and season with salt & cracked pepper.
- Place in the oven and cook for 20-25 minutes.
- Meanwhile, add the lemon juice, water and figs to a pan and cook on medium-high heat for about 5 minutes or until the figs are tender and the water has evaporated.
- Add bacon, sprouts and figs to a large serving bowl and toss to combine.
