zesty prawn salad

Ingredients

1kg prawns
60ml olive oil
60ml lemon juice
2 tbsp lemon zest
5g fresh basil, leaves chopped
2 tsp honey
1 red onion, sliced
250g cherry tomatoes, quartered
1 lemon, cut into wedges

How to make it

  • Mix together the olive oil, lemon juice, lemon zest, basil and honey. Submerge the prawns in the marinade, cover and refrigerate for 4-5 hours.
  • Meanwhile, toss together the red onion and cherry tomatoes.
  • Bring a bbq grill plate to high heat and cook the prawns for 2-3 minutes each side.
  • Toss the prawns with the onion and cherry tomatoes.
  • Serve with lemon wedges.
